Blackberry and Apple Crumble

This always tastes much better if you have picked the blackberries yourself!

Crumble mixture can be made in advance and put in the fridge overnight, or in a bag in the freezer for a few days. (Don’t forget to take it out at least an hour before you will need it.) You need clean hands to make a crumble!

This recipe is just as yummy with apple and any soft fruit – or even a mix of fruits. The exact quantities of fruit do not really matter.

Preparing the fruit:

  1. Peel, core and chop the apples
  2. Put into a saucepan with a little water and cook for 4-5 mins, stirring occasionally
  3. Add the blackberries and the sugar
  4. Take off the heat and pour into an ovenproof dish  

To make the crumble:

  1. Put the flour and butter into a bowl and use a knife to cut the butter into small pieces, mixing with the flour
  2. When the pieces are quite small, use your finger tips to rub the butter into the flour – moving your fingers around the bowl from place to place. You want to make a mixture with a texture like breadcrumbs – it only takes a few minutes
  3. Add the sugar and ginger and stir till mixed
  4. Spread over the fruit in the dish and smooth down
  5. Sprinkle a little sugar over the top
  6. Bake in a moderate oven 190°C/375°f/Gas Mark 5 for 30 mins – until the top is turning brown
