Traditional Scottish Shortbread

On 30 November, Scottish people celebrate St Andrew's Day. Here's a traditional Scottish recipe for shortbread.
Ingredients
- 100g (4oz) plain flour
- 50g (2oz) caster sugar
- 100g (4oz) butter (room temperature)
- 50g (2oz) semolina
Making and cooking it
- Pre-heat the oven to 160°C/310°f/Gas Mark 2
- Place all the ingredients in a large bowl and mix together using a wooden spoon until a it forms into a ball of dough. Use your hands to make it into a ball
- Next roll the shortbread out into a circle (or you can use your hands to press it out) directly onto a greased baking tray (about 20cm/8" diameter)
- Use your fingers to tidy up the edges and give it a fluted (wavy) appearance
- Prick the shortbread gently, all over with a fork. Then score the surface into 8 even wedges
- Sprinkle with caster sugar
- Bake for 20-25 minutes until firm and golden
- Leave to cool a little, but cut into wedges while still slightly warm
- Store in an airtight tin
