Medium Spicy Beef Curry with Saffron Rice

A recipe for a medium hot beef curry - a great favourite. You can also use fish to make this dish; choose a fish with firm flesh.

WARNING: Never rub your eyes after chopping chillies, it is extremely painful. Wash your hands straight away after handling chillies.

• 110g (4½oz) rump steak, cubed
• 5 fresh mixed red and green chilli peppers, chopped (you can make the curry less hot if you take out the seeds).
• 600ml (1 pint) water
• 1 stock cube, either vegetable or beef
• 2 garlic cloves, peeled
• 1 medium sized red onion, chopped
• 1 lemongrass stalk, bashed
• 2.5cm (1in) piece of fresh ginger, peeled
• 50g (2oz) fresh coriander
• 1 x 5ml spoon (teaspoon) turmeric
• 1 x 5ml spoon (teaspoon) cinnamon
• 50g (2oz) fresh chives
• 2 x 15ml spoon (tablespoons) vegetable oil
• 1 lemon, juice only
• 200ml (7fl oz) coconut milk
• 1 large can of chopped tomatoes

For the rice:
• pack of rice, preferably basmati or wild rice
• 3 sprigs of saffron

Making and cooking it
For the currry:
1. Fry the beef and onion gently in a large pan or pressure cooker until the beef has sealed
2. Add the garlic, water, stock cube, turmeric, cinnamon, lemongrass, ginger, coriander, chives, lemon juice, coconut juice and chillies
3. Simmer gently for 30 minutes
4. Add the canned tomatoes
5. Bring back to the boil and simmer for a further 30 minutes making sure that the mixture does not dry out and catch (start to burn) on the pan

For the Rice:
1. Follow the instructions on the pack for quantity and cooking time. Normally you only need about 10 minutes to cook rice. Bring the water to the boil, add the rice and the saffron
2. When the rice is cooked, drain and serve on a large plate, make a nest in the centre
3. Spoon the curry into the rice nest
