Vegan Butter Bean Paté

Ingredients
- ½ a 425g (15oz) can of butter beans, drained
- ½ lemon, grated rind and juice
- ½ clove garlic, peeled and crushed
- 1 x 15ml spoon (tablespoon) fresh mint, finely chopped
- 1 x 15ml spoon (tablespoon) olive oil
- 1 x 15ml spoon (tablespoon) water (approx)
- salt and black pepper, to taste
- vegetables or herbs to garnish
Making and cooking it
1. Place the butter beans and lemon juice in a food processor and blend until smooth
2. Add the rest of the ingredients, and blend again, adjusting the amount of water to give a smooth paté
3. Spread onto bread or crackers and garnish with herbs or vegetables
