Carrot Cake Squares

This is a slightly different take on carrot cake, with a fun decoration. Using a mix of wholemeal and white flour makes it a little healthier.


Making and cooking it
  1. Preheat the oven
  2. Sift both types of flour into a large bowl, tipping in any bran left in the sieve
  3. Using a wooden spoon stir in the baking powder, mixed spice , light muscovado sugar and carrots
  4. Add the eggs and oil then stir until mixed together
  5. Pour the mixture into the tin and smooth top with the back of the spoon 
  6. Bake for 50 minutes until golden brown
  7. Remove from the oven and leave for ten minutes, then place a wire rack on top and carefully turn out the cake
  8. When the cake is cool, beat the cream cheese, vanilla extract and icing sugar in a medium bowl until smooth and creamy
  9. Chill for ten minutes
  10. Spread the icing over the cake and smooth using a palette knife , then cut into 16 squares
  11. Mix together the yellow and red icing to make orange then roll into 16 carrot shapes to top each square
