A simple version of traditional summer pudding made in a loaf tin

Ingredients

Making and cooking it
  1. Wash all the fruit gently. 
  2. Gently heat the fruit, sugar and 45ml (3 tablespoons) water in a saucepan, until the sugar dissolves and the fruit juices start to run
  3. Simmer for 2 to 3 minutes, then set aside
  4. Cut the crusts off the bread
  5. Line the base of a 900g (2lb) loaf tin with 2 or 3 slices of the bread
  6. Spoon in the fruit and juices and cover with the remaining bread
  7. Cover with clingfilm and weigh down (scale weights or tins of food are ideal for this) 7.
  8. Chill overnight in the fridge
  9. Remove weights and turn out the pudding onto a plate, slice and serve
