Eton mess was served in the 1930s in the Eton School's tuck shop, and was made with either strawberries or bananas mixed with ice cream or cream. This recipe uses British raspberries as they are at their best in the Summer (July). What fruit would you add?
Ingredients
- 200ml (7¼fl oz) double cream
- 30ml (2 tablespoons) honey
- few drops of vanilla essence or extract
- 55g (2oz) Hobnobs or similar biscuits, crushed
- 55g (2oz) British raspberries, crushed
Making and cooking it
- Whip the cream, honey and vanilla essence in a bowl, until thickened
- Stir in the crushed biscuits and raspberries to create a marble effect
- Serve immediately
