Summer is here and watercress is the perfect food to get you fit to enjoy yourself

Ingredients

Making and cooking it
  1. Dissolve the stock cube in the boiling water
  2. Place the watercress into a food processor and blend to a pulp
  3. Add the stock and the ice cubes to the watercress and blend again. 
  4. Pour into a container and chill in the fridge for an hour
  5. To serve, pour into bowls and drizzle with the double cream
