Triple Chocolate Chip Cookies

Ingredients
- 110 g butter
- 110 g caster sugar
- 110 g soft light brown sugar
- 1 egg
- 1 tsp vanilla
- 150 g plain flour
- 60 g oats
- 1/2 tsp baking powder
- 1/4 tsp salt
- 30 g each milk/dark and white choc chips
Making and cooking it
- Cream together the butter and sugars until pale and fluffy
- Mix together the egg and vanilla and beat into the butter mixture
- Add the flour, oats, baking powder, and salt and fold in gently
- Then add the chocolate chips and fold them in too
- Line baking sheets with parchment
- Arrange heaped tablesspoons of the mixture about 5 cm (2 in) apart , as the cookies spread during cooking
- Chill the cookies in the freezer for 10 to 15 minutes , or in the fridge for 30 minutes .
- Preheat the oven to 180*C/350*F/Gas Mark 4
- Bake for 12 mins until golden around the edges.
- Leave to cool slightly on the baking sheets, then transfer to wire racks to cool completely.
