Olympic Cupcakes

A lovely basic cupcake recipe, with an Olympic theme.
Ingredients
- 100g (4 oz) soft butter
- 100g (4oz) caster sugar
- 100g (4oz) self-raising flour
- pinch of baking powder
- 2 eggs - at room temperature
- For the Icing: 100g icing sugar ,enough warm water to make a stiff paste
- To decorate : Red and blue sweets
Making and cooking it
- Put cake cases in the bun (patty) tin
- Turn on the oven to 185C / 375F / Gas no 5
- Cream the butter and caster sugar together in the until light and fluffy
- Break the eggs into the small bowl and whisk with a fork
- Add the eggs, baking powder and flour a little at a time, mixing in until smooth
- Drop a large teaspoon of mixture into each of the cake cases
- Bake for about 20 minutes(until golden and well risen)
- Take from the oven and cool on wire rack
- When they are cool, make the icing up and spoon a little onto the centre of each
- Add a sweet to decorate.
