Ratha Yatra festival takes place in India in the months of June and July. Chapatis are traditional unleavened (without yeast) flat breads which are the main diet of most of the people in India. They are fun to make.

Ingredients

Making and cooking it
  1. Mix the salt and flour together, saving 50g (2oz) of flour for rolling out
  2. Add the water to the flour and salt, mix together to make a soft dough
  3. Knead well for at least 10 minutes
  4. Make into a ball, wrap in cling film and leave to stand at room temperature for at least one hour
  5. Divide dough into walnut sized balls, thinly sprinkle flour on your work surface and rolling pin, and roll out very thinly
  6. Fry each chapatti in a heavy-based frying pan with very little oil, about one minute on each side, or until on brown spots appear
  7. Serve warm with curry or dhal
