Strawberry Meringues

Strawberries and cream are a much-loved British tradition. They are served every year in June at Wimbledon, where they get through almost 28,000 kilos of English strawberries and 7,000 litres of dairy cream. You won't need that much for this recipe though!


Making and cooking it
  1. Carefully wash the strawberries and remove the green stalks
  2. Carefully cut the strawberries in half length ways and put to one side
  3. Put the mascarpone into a bowl, add the cream and sift in the icing sugar. Whisk together until well blended and smooth
  4. Divide the mixture into 4 and fill the middle of 4 meringues
  5. Place the halved strawberries into the cream, pushing down to secure them, don't worry if there are too many, you can always put them on the plate next to the meringues
  6. Serve straight away
