Vegan Bonfire Biscuits

The summer solstice is the longest day of the year and falls on June 21st. On this day the sun is at its highest point in the sky. There is a summer solstice celebration at Stonehenge, the ancient stone circle on Salisbury Plain in Wiltshire. Other people celebrate in groups in various open spaces or gardens. Often bonfires are lit to 'strengthen' the sun's light and people eat barbeques or picnics. These biscuits are called Bonfire Biscuits because they are great for eating around bonfires.

Ingredients

Making and cooking it
  1. Preheat the oven to gas mark 3, 170°C/325°f/Gas Mark 3
  2. Melt the margarine and syrup in a saucepan
  3. Mix in the dry ingredients
  4. Stir in the bicarbonate of soda and water mixture
  5. Place 30ml (6 teaspoonfuls) of the mixture onto an ungreased tray, leaving plenty of space between each blob
  6. Bake in the oven for 10 to 15 mins, until golden. Allow to cool slightly for 2 minutes then place on a wire rack to cool
  7. Repeat from step 5, until all the mixture has been used.  You can get the next tray ready whilst one is in the oven
