Preparation Time: 2 minutes, it is good if you can leave the chicken in the marinade for an hour or so but it is not essential.

Fajitas are a delicious kind of filled wrap. The are often filled with a spicy meat or bean filling and eaten with sauces like guacamole, soured cream and salsa. You can vary the main filling, adding extra vegetable or kidney beans for a vegetarian alternative. Try turkey or beef strips if you prefer. Fajitas are best eaten hot but eaten cold they can make a satisfying snack.



Making and cooking it

Preparing the marinade:

  1. Squeeze the lime 
  2. Peel and crush the garlic
  3. De-seed and slice the chilli ( you might want to wear disposable gloves to handle the chilli as the oil can be fiery and hard to shift)
  4. Chop the coriander
  5. Mix all of the above with the oil
Preparing the main dish:
  1. Remove the skin from the chicken, cut into strips and mix with the marinade
  2. Cover the dish with film and put it in the fridge until needed. Marinades work best when left for a few hours but you can use the chicken as soon as you are ready)
  3. On a clean chopping board, with the vegetable knife, slice the oinion and pepper, grate the cheese (chop tomato, if using)
  4. Add the chicken to the frying pan and stir fry for 4-6 minutes, checking that the chicken is cooked through
  5. Add the onion and pepper and cook for a further 2 minutes
  6. On a plate, warm the tortillas for about 20 seconds in the microwave 
  7. Spread a little of the chicken down the centre of the top wrap, add cheese, tomato, guacamole or salsa as preferred 
  8. Roll up and put on serving plate 
  9. Repeat with each wrap
  10. Serve hot
