Making and cooking it
  1. In a large saucepan gently cook the chopped onion in bacon drippings until soft
  2. Stir in the black-eyed peas with the remaining water from the tins, ham, and cayenne pepper
  3. Simmer for 10 minutes
  4. Stir in hot cooked rice and salt to taste.  Serve with the sliced onion (optional)
