Fruit and Nut Fudge

Making and cooking it
  1. Fill a glass with iced water and put in the fridge
  2. Grease and line a 20cm square tin with baking parchment
  3. In a large pan, heat the milk (condensed and full fat) and sugar over a low heat,  using a wooden spoon; stir until the sugar has completely dissolved 
  4. Bring to the boil, then reduce the heat to low and simmer for 10-15 minutes - you must keep stirring and scraping the bottom of the pan to stop it from burning. BE VERY CAREFUL  the fudge is VERY HOT
  5. After about 10 minutes you can start to test if the fudge is ready.  BE VERY CAREFUL  the fudge is VERY HOT. Remove the pan from the heat. Get the iced water out of the fridge and using a clean spoon drop a small drop into the glass. Leave it for a few seconds then take out with your fingers and gently squeeze - be careful it could still be hot on the inside. If it goes into a soft ball then it is ready to beat. If not, put it back on the heat and try again after a few minutes
  6. When it's at the soft ball stage, stir in the cubed butter, remove the pan from the heat and beat with the wooden spoon until it's thick and begins to stop looking glossy (about 10 minutes)
  7. Stir in the fruit and nuts and pour into the tin
  8. Put into the fridge to set -about 30 minutes
  9. When its set, carefully cut into squares
  10. Place in plastic bags or a gift box and decorate with a ribbon for a fabulous edible Christmas gift
