Winter Apple Cake

Making and cooking it
  1. Preheat the oven to 180°C / Gas Mark 4 / Fan 160°C
  2. Grease and line a 23cm round cake tin
  3. Put the butter and sugar into a large mixing bowl and whisk together until pale and fluffy
  4. Grate the apple and stir into the mixture
  5. Mix in the eggs
  6. Sift together the flour, baking powder, mixed spice, cinnamon and stir into the apple mixture, along with the nutmeg
  7. Finally fold in the sultanas and walnuts
  8. Pour into the cake tin and bake for 45 - 60 minutes. You can test if it's cooked by inserting a skewer into the centre of the cake - if it comes out clean it's cooked
  9. Remove from the oven and allow to cool in the tin for 5 minutes before turning it out to cool on a wire rack
  10. When it's completely cool use a sieve to lightly dust the cake with icing sugar
