Gooey Chocolate Brownies

Number of servings: 12 greedy/ 18 stingy-its worth making such large portions because these brownies always disappear surprisingly quickly
Serving suggestions: Works well with double cream/chocolate or vanilla ice cream

These are very rich and not the healthiest option, however a little treat now and then is fine!


Making and cooking it
  1. Line a 20cm x 30cm (8" x 12") tin with baking parchment/greaseproof paper
  2. Preheat the oven to 160°C/310°f/Gas Mark 2/3
  3. Melt the butter and chocolate in a large bowl over a saucepan of simmering water
  4. Stir the sugar, salt and vanilla into the melted chocolate
  5. Make a well and mix in the eggs one at a time
  6. Add flour, cocoa powder, chopped nuts and raisins
  7. Pour the gloopy mixture into the lined tray and place in the oven
  8. Take out after approx. 40 minutes- to check that the brownies have cooked put a skewer through the middle- it should come out clean
