Hubble Bubble Chowder

A tasty and healthy Halloween dish.

Ingredients

Making and cooking it
  1. Heat the oil in a saucepan. Cook the onion over a medium heat for 5-6 minutes until softened
  2. Add the garlic and cook for a further minute
  3. Stir in three quarters of the petits pois, then pour in the stock and add the mixed herbs
  4. Bring to the boil and simmer for 10-12 minutes
  5. Meanwhile, grill the bacon until crisp
  6. Allow the soup to cool for a few minutes, then transfer carefully to a food processor and mix until smooth
  7. Return the soup to the pan and add the remaining petits pois
  8. Bring to the boil and simmer for 2 minutes or until the petits pois are tender
  9. Season to taste, and then stir in the butter (if using)
  10. Break the bacon into pieces and add a quarter of it to the soup
  11. Pour into bowls and scatter the remaining bacon over the top
