Leek and Potato Soup

This is Angela's soup, one of the soups made by pupils in the Spaldwick Community Primary School Soup Competition.


Making and cooking it
  1. Cut up the leeks, chilli, onions and garlic
  2. Chop up the potatoes
  3. Fry the onions, leeks, potatoes, garlic and chilli with a knob of butter
  4. Add the vegetable stock
  5. Simmer for 20 minutes then take off the heat
  6. Allow to cool and blend to a smooth texture
  7. Add salt, pepper, cream and chilli flakes to taste
  8. Enjoy
