Fair play to you for trying to amke a codlde. I take it you're not from Dublin. Ive been making Coddle all my life and follow the recipe that has been handed down for generations. This was was dish that was made in the poorer parts of Dublin, mostly from the innercity area. The authentic recipe is no where near as fancey as yours. Basically what you nee is a load a of carrots sliced, potatoes sliced, couple of onions and good quality pork sausages and rashers or bacon bits. The only herb used is thyme. Also some real Dubs addd in a bit of white pudding for flavouring. Coddle is nevwer made in an oven. Boil all the ingredients in a large pot and simmer for about 40-60mins. Eat with chunks of bread if prefered. Oh and Coddle always tastes better the next day when it has all thickened. can be kept & ate for 3-4 days after cooking. xxx
