Ingredients
For the Fish:
• A drizzle of olive oil
• 1 tuna steak
• ½ lemon, cut into wedges
For the Couscous
• 55-85g (2-3oz) couscous
• 1 lemon, juice only
• 1 lime, juice only
• ½ avocado, peeled and diced
• A small handful of fresh mixed herbs, chopped
• Salt and freshly ground black pepper

Making and cooking it

1. Heat the oil in a non-stick griddle pan and griddle the tuna steak and lemon wedges for two minutes on each side
2. For the couscous: place the couscous into a bowl and cover with boiling water. Cook according to packet instructions
3. Fluff the couscous up using a fork and stir in the lemon and lime juice, avocado, herbs and seasoning
5. To serve, transfer the tuna steak to a serving plate and serve with the couscous
6. Serving suggestion: I like this with broccoli, but it is also very good served with a mixed green salad with balsamic vinegar dressing
