Tasty whole-wheat pizza.
  • 250g-300g (10-12oz) cups flour
  • 115g (4oz) whole-wheat flour
  • two packages (¼ ounce each) quick-rise yeast
  • 1 x 5ml spoon (teaspoon) garlic powder
  • ½ x 5ml spoon (teaspoon) salt
  • 250ml (7 fl oz) warm water (120 to 130 degrees)
  • 2 x 15ml spoon (tablespoon) plus 1 x 5ml spoon (teaspoon) olive oil (divided)
  • one can of (350g/14 oz) diced tomatoes, not drained
  • 1½ x 5ml spoon (teaspoon) sugar
  • 1 x 15ml spoon (tablespoon) chopped fresh parsley
  • 1½ x 5ml spoon (teaspoon) Italian seasoning
  • 1½ x 5ml spoon (teaspoon) dried basil
  • ½ x 5ml spoon (teaspoon) garlic powder 
  • ¼ x 5ml spoon (teaspoon)pepper
  • 115g (4oz) chopped zucchini (courgettes)
  • 115g (4oz) sliced fresh mushrooms
  • 25g (1oz) cup chopped onion
  • 25g (1oz) chopped red pepper
  • 25g (1oz) chopped green pepper
  • 200g (8oz) grated reduced-fat mozzarella cheese

Making and cooking it

  1. Preheat oven to 220°C/425°f/Gas Mark 7
  2. Make a dough with the flour, yeast, warm water, salt and 15ml (tablespoon) of oil
  3. Cover and leave to rise in a warm place until double in size
  4. Punch dough down. Divide in half; roll each portion into 30cm (12") circle.  Transfer to greased 30cm (12") pizza pans
  5. Prick dough with fork
  6. Bake in preheated oven eight to ten minutes or until lightly browned
  7. Mix tomatoes, sugar, parsley, Italian seasoning, basil, garlic powder and pepper in saucepan
  8. Bring to boil; reduce heat. Simmer uncovered, 15 to 18 minutes, stirring occasionally
  9. In a skillet (frying pan), saute (lightly fry) vegetables in remaining 5ml (teaspoon) of oil until tender
  10. Spread each pizza with one-cup sauce (refrigerate or freeze the rest of the sauce for another time)
  11. Sprinkle with vegetables and cheese. Bake in preheated oven 12 to 15 minutes or until cheese is melted

    The recipe makes two pizzas of six slices each
