This is really easy to make. You can add fruit or vegetables of your choice (pineapple, sultanas, cranberries, mandarin, apple, celery, peppers, beetroot).

Ingredients
Coleslaw:
• A bunch of spring onions
• 4 medium carrots
• 1 medium white cabbage
• 2 x 15ml spoons (tablespoons) of low fat mayonnaise
• 1 lemon
Optional:
• 1 x 15ml spoon (tablespoon) of sultanas
• 1 small tin of pineapple rings
• 50g (2oz) low fat cheese
425g (15oz) tin of sweetcorn
• A bunch of spring onions

• 1 lemon

Equipment
- Knife
- Bowl
- Grater
- Wooden Spoon
Making and cooking it

1. Wash the spring onions then chop off the tops (about 2cm)
2. Use a knife to chop them into rings and put in a bowl
3. Peel the carrots and chop lengthways into sticks and put in the bowl
4. Take the cabbage and cut into thin slices going from top to bottom, wash and pat dry on paper towel
5. Put the sliced cabbage in the bowl
6. (If you are going to add the extra ingredients above, then chop the pineapple into small pieces, grate the cheese and add the whole sultanas and sweetcorn to the vegetables already in the bowl)
7. Finally put the mayonnaise into the bowl with a squeeze of lemon and mix well with a spoon
