This is a vegetarian recipe

The MOST Chocolaty shortbread you will ever eat.
  • 210g (8½oz) plain flour
  • 10g (½oz) cocoa powder
  • 150g (6oz) margarine
  • 75g (3oz) caster or granulated Sugar
  • 3 drops of vanilla essence
  • Weighing Scales
  • Mixing Bowl
  • Wooden Spoon
  • Sharp Knife/Cookie Cutter
  • Baking Tray
  • Wire Rack

1. Cream together margarine and sugar until soft
2. Blend in the flour, cocoa and vanilla essence and knead lightly
3. Either cut out individual biscuits and/or put into a greased tin or shortbread mould  
4. Bake at 325*F/170*C/Gas mark 3 for approximately 15-30 minutes, depending on size
5. Once cooked, sprinkle the top with caster sugar and cool on wire racks

i thought this shortbread was amazing!! everyone else seems to say it was too dry, but for me it was almost a little too gloopy! does it matter if i used butter instead of margarine?
