Ingredients
  • 250 g Plain /spelt flour, half half
  • 250 g Butter
  • 150 g Sugar ie castor (natural)
  • Four tablespoons Caraway seeds
Equipment
  • Large mixing bowl
  • Spatula. 
  • Baking tray and greaseproof paper. 
  • Tin or container to keep the biscuits in once cooled.
Making and cooking it

  1. Put flour and butter in large bowl
  2. Using fingers and thumbs mix butter into flour until like fine breadcrumbs
  3. Add sugar and caraway seeds
  4. Cool in fridge for an hour
  5. Press together and roll out to 3/4 inch thickness
  6. Using a biscuit cutter, press out as many as you can using all the mix
  7. Place on greaseproof paper on tray. Sprinkle liberally with castor sugar
  8. Bake in centre of a moderately preheated oven for about 45 minutes. 160-170 degrees. Don’t brown as they will taste burnt
  9. When finished baking, dust liberally with icing sugar 
  10. Cool
