  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups flour
  • 250 ml milk
  • 175 ml vegetable oil
  • 2 tsp baking powder
  • 1 tsp vanilla extract/powder

  1. Preheat oven to 180 C and line muffin pans
  2. In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute.
  3. Add the flour, milk, oil, baking powder, and vanilla and beat for anther minute, just until batter is smooth and creamy. Don`t overbeat.
  4. Pour batter into the prepared baking pans
  5. Bake for 18-20 mins or until toothpick comes out clean when inserted
  6. Loosen the sides of the cake from the pan with a thin knife.
  7. Then turn out onto a cooling rack and peel of the paper.
  8. Let cool and frost with your favorite frosting. (optional).

Yes.I made these and tasted the mixture before cooking,it tasted really sweet.I added sultanas,so hopefully they will mild the taste?

I'd halve the recipe or use 1/2 c sugar less.
