  • 2 cups sugar
  • 4 eggs
  • 2 1/2 cups flour
  • 250 ml milk
  • 175 ml vegetable oil
  • 2 tsp baking powder
  • 1 tsp vanilla extract/powder

  1. Preheat oven to 180 C and line muffin pans
  2. In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute.
  3. Add the flour, milk, oil, baking powder, and vanilla and beat for anther minute, just until batter is smooth and creamy. Don`t overbeat.
  4. Pour batter into the prepared baking pans
  5. Bake for 18-20 mins or until toothpick comes out clean when inserted
  6. Loosen the sides of the cake from the pan with a thin knife.
  7. Then turn out onto a cooling rack and peel of the paper.
  8. Let cool and frost with your favorite frosting. (optional).
