Ingredients
- 250g (10oz) butter
- 200g (8oz) sugar
- 5 eggs
- 250g (10oz) plain flour
- 10g/3 level tsp baking powder
- 75g (3oz) blackberries
Equipment

- Mixing Bowl
- Bun Tin
- Muffin Cases
- Sieve
- Metal Spoon
- Wire Rack
- Airtight Container
Making and cooking it

- Preheat the oven to 200ºC/400ºf/Gas Mark 6, put muffin cases into the holes in a bun tin
- Cream together the butter and sugar in a large bowl using an electric whisk or wooden spoon
- Beat the eggs and gradually add to the butter mixture. (If the mixure starts to curdle add a spoonful of the flour)
- Sift the flour and baking powder into the bowl
- Using a metal spoon, gently fold into the mixture
- Divide the mixture into muffin cases, filling each case no more than two-thirds full
- Push a blackberry into the middle of the mixture in each case
- Put the bun tin in the oven
- Bake each batch for 15-20 minutes until risen and golden
- Remove from oven and place individual muffins on a wire rack to cool
- Store in an airtight container

HHB,Yes, I always like bannaa cake and muffins. Especially during baking. That sweet smell simply makes me feel like making myself a cup of tea and waiting to eat the cake...I will do the same when bought some small and sour blueberries. Otherwise would boil them with maple syrup to go with pancakes for breakfast. |
