This is a vegan recipe

  • ½ a 425g (15oz) can of butter beans, drained
  • ½ lemon, grated rind and juice
  • ½ clove garlic, peeled and crushed
  • 1 x 15ml spoon (tablespoon) fresh mint, finely chopped
  • 1 x 15ml spoon (tablespoon) olive oil
  • 1 x 15ml spoon (tablespoon) water (approx)
  • salt and black pepper, to taste
  • vegetables or herbs to garnish

  1. Place the butter beans and lemon juice in a food processor and blend until smooth
  2. Add the rest of the ingredients, and blend again, adjusting the amount of water to give a smooth paté
  3. Spread onto bread or crackers and garnish with herbs or vegetables
