Very easy to make and great as a summer starter or to go with a barbeque
  • 225g (9oz) black olives
  • 225g (9oz) green olives
  • 60ml (4 tablespoons) extra virgin olive oil
  • 3 small sprigs each of fresh thyme, rosemary and oregano
  • 4 small fresh bay leaves
  • 1 large clove of garlic, peeled and sliced thinly
  • 2 lemon slices, quartered
  • Weighing Scales
  • Tablespoon
  • Knife
  • Chopping Board
  • Mixing Bowl
  • Spoon
Making and cooking it

  1. Mix everything together
  2. Cover and set aside for 3-4 hours before serving.  This lets the flavours mix together
  3. Serve
