Ingredients
For the Fish:
• a drizzle of olive oil
• 2 small smoked haddock fillets
• enough milk to cover the haddock
For the Couscous:
• 55-85g (2-3oz) couscous
• a handful of sun-dried tomatoes
• one red pepper diced
• a small handful of dill, small handful of chives, both chopped
• salt and freshly ground black pepper

For the Couscous:
• 55-85g (2-3oz) couscous

Making and cooking it

1. Soak the tomatoes in water for 1/2 hour
2. Place the haddock fillets in a frying pan, cover with the milk (or water) bring to the boil and then simmer for 10 minutes
3. For the couscous, place the couscous into a bowl and cover with boiling water. Cook according to packet instructions
4. Fluff the couscous up using a fork and stir in the drained tomatoes, and the pepper 5. Bring up to temperature by heating gently for about one minute
5. To serve, transfer the Haddock fillets to a serving plate and serve with the couscous. Sprinkle the chives and dill over the Haddock
6. Garnish with a mixed leaf salad
