The uniq fruit was discovered in Jamaica. Uniq fruit, often marketed by the trademark name "Ugli" fruit, is a cross between a grapefruit and a tangerine. The puffy, wrinkled skin is strange-looking on the outside, but inside the flesh is sweet, extremely juicy and separates easily into grapefruit-like sections. Especially delightful eaten right out of the hand. A refreshing treat.
  • 3 eggs, separated (separate the yolks into one bowl and whites in another)
  • 175g (7oz) caster sugar
  • grated zest and juice of 1 ugli fruit
  • grated zest and juice of 1 lime
  • 300ml (½ pint) double cream
  • Weighing Scales

  • Measuring Jug
  • Whisk
  • Strainer
  • Small Saucepan
  • Ice Cream machine or Freezer Proof Container

  1. Whisk the egg yolks together with half the sugar and the ugli and lime zests, until thick and creamy. It will be thick enough that when you drop a trail of the mix from your beater, it will lay on the surface like a ribbon for a few moments
  2. Strain the ugli fruit juice and lime juice into a small saucepan and heat gently
  3. Pour onto the thickened yolk mixture and whisk again, the mix will get runny again 4.
  4. Whip the double cream until it just holds its shape
  5. Whisk the egg whites (in a completely clean bowl with clean whisk/beater) until stiff and then whisk in the rest of the sugar, until it's stiff again. This is much easier with an electric whisk
  6. Gently fold the whipped cream and egg white mixture into the yolk mixture
  7. Freeze using an ice cream machine (according to manufacturer's instructions), or place in a freezer proof container and freeze overnight, stirring occassionally
  8. To serve, sometimes ice cream can be very hard, you may need to take it out of the freezer and put it in the fridge 20 minutes before you want to eat it
