These simple mini quiches are easy to make. If you are short of time you can use ready made shortcrust pastry. You can try different fillings like cooked bacon chopped up or cooked onion, chopped mushrooms are good too.
For the pastry
  • 175g plain flour
  • pinch of salt
  • 85g butter, chopped into chunks(must be hard butter and cold)
  • 2-3 tbsp cold water

For the filling


  • 2 eggs beaten
  • 60g grated cheese, like cheddar
  • 150ml milk
  • a little salt and pepper to taste




  • 2 rahers of bacon cooked and chopped or 4 -6 mushroom chopped and cooked or half a small onion chopped and cooked. 


Healthier version
It's the pastry that makes these less healthy, use filo pastry for the case instead for a healthier quiche and add chopped cooked veggies like brocolli, mushrooms or tomatoes too.

  1. Preheat the oven to Gas 6, 200C
  2. Grease the bun tin
  3. Seive the flour and salt into the bowl
  4. Add the butter and rub in to make breadcrumbs
  5. Add the water, a little at a time, to bring the pastry dough together. Gently press the pastry into a ball
  6. Flour a surface and roll the pastry out until it's about 3mm thick
  7. Cut pastry circles and lightly shape into the bun tin
  8. Break the eggs into a bowl aand beat well with the fork
  9. Add the salt and pepper, milk and cheese (and any of your optional items) and mix in
  10. Spoon the mixture into the cases. Don't add too much as the mix will rise
  11. Bake for 15 minutes, then remove from the oven
  12. Allow to cool a little and then serve or finish cooling on the rack
