A quesadilla is a toasted tortilla with melted cheese inside. As well as cheese, you can put lots of different ingredients in a quesadilla. My favorites are spring onions and peppers but you can add cooked meats, olives, mushrooms, whatever you like really.
  • 8 flour tortilla
  • 4 handfuls of grated cheese, about 200g altogether
  • 1 spring onion
  • 2-3cm of long, sweet red pepper
Healthier version
 Serve with tomato salsa and use low fat cheese.

Making and cooking it

  •  First grate the cheese
  • Then chop the pepper and onion up into small pieces
  • Take the first tortillia and sprinkle on the cheese and add some pepper and onion, then add another tortilla like a sandwich
  • Now put it into a frying pan on a low heat, to heat through
  • Check every now and again that it's not burning and use the fish slice to turn it
  • You will know it's done because it will be a goldeny brown color and melted on the inside
  • Put it on the board and slice it into quarters or eigths and serve hot
