Ingredients
- 250g self raising flour
- 2x15ml of baking powder
- 100g caster sugar
- 230ml semi skimmed milk
- 1 egg
- 60ml oil
- 150g fruit (drained and fresh)
Equipment
- Weighing scales
- Large bowl
- Measuring spoons
- Muffin cases
- Measuring Jug
- Wooden spoon
- Patty tin
- Can opener
- 2 metal spoons
- Cooling racks
Making and cooking it

- Preheat oven to 180°c or gas mark 4
- Mix and then beat the ingredients together into a smooth batter (don't add fruit yet)
- Add fruit when the batter is smooth, stir through carefully
- Divide the mixture equally between the cases using 2 spoons
- They go into the oven and bake for 20-25 minutes, until golden brown
- Allow to cool on cooling rack

Awesome Dish, but a bit too much butter for my diet. I can do the same with just oil and this still looks like it might just work out. |
