In the UK, the Vegetarian Society has a National Vegetarian Week about the end of May. It aims to celebrate vegetarian food and way of living and how healthy it is.

It's also a good time to think about summer and cooking outdoors. So try this yummy recipe to make a change from the usual baked potatoes that are cooked on a barbeque.
Ingredients
  • 1 small/medium sweet potato per person
  • sunflower oil
  • butter or margarine
  • salt & freshly ground black pepper
  • grated vegetarian Cheddar cheese to serve
Healthier version
Leave out the butter and cheese, have baked beans or a tomato and onion sauce instead

Making and cooking it

  1. Scrub the sweet potatoes and brush with a little of the oil
  2. Wrap each sweet potato in a sheet of kitchen foil
  3. Cook the potatoes on a hot barbeque for 40-60 minutes (depending on size) until tender. Turn them every 5 - 10 minutes
  4. When cooked, open the top of the foil so that you make a kind of dish, then split open the sweet potato and serve with butter or margarine, salt, freshly ground black pepper and grated cheese
