The 1st of May, known as May Day or Garland Day, is the traditional day for celebrating the arrival of Spring. Long ago, the people of England gathered on their village greens for May Day celebrations and danced around the Maypole. All the maidens of the village would dance around the Maypole and the loveliest was chosen to be the May Queen.
It used to be the custom to bake Maids of Honour for tea on May Day.
  • 225g (9oz) ready made puff pastry
  • 225g (9oz) curd or cottage cheese
  • 1 egg
  • 1 lemon, rind grated
  • 75g (3oz) sugar
  • 50g (2oz) currants
  • 15g (½oz) blanched Almonds
  • 15g (½oz) butter (room temperature)
  • 5ml (1 teaspoon) lemon juice (from the lemon)
  • Weighing Scales
  • Fine Sieve
  • large Bowl
  • Dessert Spoon
  • Wooden Spoon
  • Rolling Pin
  • Circular Cutter
  • Shaped Baking Tray or Bun Tin
  • Wire Rack

  1. Preheat oven to 190°C/375°F/Gas Mark 5
  2. Push the cheese through a fine sieve into a large bowl using a dessert spoon
  3. Beat the egg in a cup then add to the cheese
  4. Add the grated rind of the lemon and 5ml (1 teaspoon) of the lemon juice along with the sugar, currants, chopped almonds and butter
  5. Mix well, using a wooden spoon
  6. Lightly flour your surface and rolling pin.  Roll out the pastry to about 5mm thick and use a circular cutter to cut it into 16 rounds and place in shaped baking tray (bun tin)
  7. Half fill the rounds with the filling
  8. Bake for 20-30 minutes until golden brown
  9. Remove from baking tray and leave to cool on a wire rack
