Valentine's Love Apple Soup

Tomatoes used to be called "Love Apples", so this recipe is really good for Valentine's Day on the 14th February.  When you blend the soup you could use a hand blender or liquidiser.  If you use a food processor, the soup may have more 'bits' in it.
Ingredients

For the soup:

  • 675g (1lb 9oz) tomatoes (vine ripened are good)
  • 4 cloves of garlic
  • 60ml (4tablespoons) olive oil
  • 1 small onion, peeled and diced (chopped)
  • 450ml (15 fl oz) vegetable stock
  • salt and black pepper

For the garnish:

  • 1 slice of bread
  • 30ml (2 tablespoons) olive oil
  • 1 small clove garlic
  • 1 x 15ml spoon (tablespoon) freshly chopped flat leaf parsley

  1. Preheat the oven to 200°C/400°f/Gas Mark 6
  2. Place the tomatoes and cloves of garlic in a roasting dish in a single layer
  3. Drizzle with 45ml (3 tablespoons) of the olive oil and roast in the oven for about 30 minutes until the garlic is soft when pierced (poked) with a knife, and the tomatoes are coloured and beginning to split open
  4. Heat the rest of the olive oil in a saucepan and gently fry the onion until soft
  5. Squeeze the garlic out of the skins and add to the onions, together with the roasted tomatoes and all the juices from the roasting pan
  6. Pour in the stock, bring to the boil and simmer with a lid on for 20 minutes
  7. Cool, then blend until the soup is very smooth (make sure all the tomato skins are well blended)
  8. To make the croutons, use a small heart shape cutter or cut by hand as many hearts as you can out of a single slice of bread
  9. Finely chop the clove of garlic
  10. Heat the olive oil in a frying pan and gently fry the garlic
  11. After 1 minute add the heart shaped pieces of bread and fry until golden
  12. Add the finely chopped parsley, stir for 20 seconds and remove from heat
  13. Pour the soup into a clean pan, add salt and pepper to taste and gently reheat
  14. Serve in warmed soup bowls topped with the heart shaped croutons
