  • 110g unsalted butter at room temperature
  • 225g caster sugar preferably golden
  • 2 large eggs free range or organic
  • 150g self raising flour sifted
  • 125g plain flour sifted
  • 120ml semi skimmed milk at room temperature
  • 1 teaspoon good quality vanilla extract
  • Weighing scales
  • Cupcake tray
  • large mixing bowl
  • wire rack
  • teaspoon 
  • mixing spoon
Making and cooking it
Always wash your hands before preparing food Always wash your hands before preparing food.

  1. Put the oven on for 160C, gas mark 4 and line a 12 hole muffin tray
  2. In a large mixing bowl cream the butter and sugar together untill the mixture is smooth
  3. put both flours in and combine
  4. then add everything else and combine
  5. put in leveled cupcake cases
  6. bake for 25 mins
  7. take out of oven and leave to cool for about 10 mins
  8. Enjoy!!!!!!!!!

i just made these for daughter. She has a milk aglerly so I used vanilla almond milk. I also ran out of honey so I used 3/4 cup honey and about 2 1/2 tablespoons of dark brown sugar. It took a while to thicken up but came out very good. Thank you for this fantastic recipe!
