A good way of using up left over turkey from Christmas Day with seasonal red cabbage
  • juice of 1 lemon
  • 45-60ml (3-4 tablespoons) mayonnaise
  • 250g (10oz) cold cooked turkey, shredded
  • 1 small red cabbage, finely shredded
  • small bunch of flat-leafed parsley, finely chopped
  • Large Bowl
  • Tablespoon
  • Sharp Knife
  • Chopping Board
  • Wooden Spoon

  1. Mix the lemon juice and mayonnaise together in a large bowl
  2. Stir in the turkey and red cabbage
  3. Scatter with chopped parsley and serve immediately
