A good way of using up left over turkey from Christmas Day with seasonal red cabbage
Ingredients
- juice of 1 lemon
- 45-60ml (3-4 tablespoons) mayonnaise
- 250g (10oz) cold cooked turkey, shredded
- 1 small red cabbage, finely shredded
- small bunch of flat-leafed parsley, finely chopped
Equipment
- Large Bowl
- Tablespoon
- Sharp Knife
- Chopping Board
- Wooden Spoon
Making and cooking it

- Mix the lemon juice and mayonnaise together in a large bowl
- Stir in the turkey and red cabbage
- Scatter with chopped parsley and serve immediately
