This is a good basic stew recipe. It is easy to substitute items to make a whole variety of stews. You could use lamb or pork or try turnip, parsnip or sweet potato . If you are vegetarian, omit the beef and, if you wish, add quorn but this will need a shorter cooking time.

Ingredients
- 6 -8 baby onions, peeled and roughly chopped
- 2 carrots, peeled and chopped
- 8 small mushrooms, washed and sliced in half
- 500g lean stewing beef
- 15ml oil
- 15ml plain flour
- 600ml stock (water and stock cube)
- 1 bay leaf
- 5ml thyme
- 5ml Worcestershire sauce
Healthier version
Use lean beef or lamb and include a variety of vegetables.
Equipment
- Kitchen knife
- Chopping board
- Vegetable peeler
- Saucepan
- Wooden spoon
- Measuring jug
Making and cooking it

- Prepare the vegetables
- With a clean knife, on a fresh chopping board, dice the beef
- Using the oil, brown the beef in a saucepan
- Stir in the flour, so that all of the beef is covered
- Add the onions and fry until they are golden brown
- Add the carrots and mushrooms
- Pour in the stock and add the bay leaf and thyme
- Bring it all to the boil and then simmer
- Cover with the lid and cook for 1 hour
