Considered a lucky meal for New Years Day in the southern states of the USA
  • 100g (4oz) peeled, chopped onion
  • 1 x 15ml spoon (tablespoon) bacon drippings (could use vegetable oil instead)
  • 2 tins (about 16 ounces each) black-eyed peas, slightly drained, or about 450g (1lb) cooked black-eyed peas
  • 100g (4oz) chopped, cooked ham
  • ¼ x 5ml spoon (teaspoon) ground cayenne pepper
  • 650g (1½ lb) hot cooked rice
  • salt to taste
  • 1 sliced sweet (spanish) onion (optional)

  1. In a large saucepan gently cook the chopped onion in bacon drippings until soft
  2. Stir in the black-eyed peas with the remaining water from the tins, ham, and cayenne pepper
  3. Simmer for 10 minutes
  4. Stir in hot cooked rice and salt to taste.  Serve with the sliced onion (optional)
