Ingredients
- 8 large red onions (sliced)
- 2 table spoons olive oil
- 2 cloves garlic (finely chopped)
- 1 small red chilli (finely chopped)
- 1 cup balsamic vinegar
- 2 cups red wine vinegar
- 3 cups brown sugar
- 2 bay leaves
- freshly ground black pepper

- Chopping board
- Knife
- Large pan
- Wooden spoon
- Ladle
- Jars
- Fabric or paper
- Elastic bands
- Ribbon
Making and cooking it

- Carefully slice the onions (ask an adult for help)
- In a large pan heat the olive oil, add the onions and cook until soft, stir from time to time to stop them from burning (about 6 minutes)
- Add the chopped garlic and chilli and cook for a further 2 minutes
- Next add the vinegar, sugar and bay leaves and give it a good stir
- Bring the mixture to the boil and then reduce the heat and allow the pan to simmer for 1 - 1.5 hours until the onions are translucent and the liquid has evaporated
- Allow to cool slightly for 5 -10 minutes
- Use a ladle or small cup to fill the sterilised jars, put the lids on straight away and wipe off any spills that may be on the jar
- Using paper or fabric, cut out a circle that is between 3 and 5 cm bigger in diameter than your jar. Secure with an elastic band and then use a ribbon to decorate
- Makes a great Christmas gift
Allow the chutney to mature in the fridge for at least 4 weeks before eating. Stores in the fridge for up to 6 months. Tastes great with cheese!

forgive my ignorance but when you say store in a fridge can this chutney not be stored in a dark cupboard until opened ? |
