This is a simple version of French Onion Soup. Traditionally slices of french bread are lightly toasted and then placed on top of the soup, then cheese is added on top and grilled. This gives the soup a chunky, cheesy topping. This one uses a sprinkle of croutons instead but you could experiment to see what toppings you like.
