Hedgehogs made with cocktail sticks with food one end and the other end stuck into a foil covered grapefruit (or large potato) are good fun to make and very attractive on a party table.

By the 1970's, tins of pineapple chunks and cocktail sausages had become available in the shops, making this very quick to assemble.  Before that time, people would have had to cook the sausages and cut the pineapple up neatly themselves - how much more convenient to have them ready prepared!

Of course, people can, and did, change the ingredients on the hedgehog to suit themselves.

Notice the plate the hedgehog was on - bright colours and bold patterns were all the rage in the 1970's and this plate is typical of the era.

The first moon landings had taken place in 1969 and parties at this time often took space as a theme  - kitchen foil was very useful for table decoration - a good reason for its choice, as well as its practicality!

  • half a grapefruit
  • 20-30 cocktail sticks
  • some of the following: tinned pineapple chunks, cubed cheese, mini cooked sausages, silverskin pickled onions
  • a piece of aluminium foil
  • Tin foil
  • Plate
  • Cocktail sticks
  • Knife
Making and cooking it

  1. Wrap the half grapefruit in the tin foil, all the edges should be tucked under the cut surface of the fruit
  2. Place the grapefruit, cut-side down on a plate
  3. Push a cube of cheese (for example) onto one end of the cocktail stick and push the other end into the grapefruit
  4. Continue to thread the pieces of food onto the sticks; you may try 2 different foods together, eg onion and cheese, or keep each item separate
  5. Keep chilled until needed - this does not keep and should be used on the day it is made
