Passover is to remember the time when the Jewish people were freed from slavery in the land of Egypt. Moses asked for the freedom of the Jewish Slaves. When Pharaoh refused, 10 plagues were sent down to Egypt. The 10th plague was the slaying of the first born sons. The Jews had been warned by an angel, and had put lambs' blood on their doors, so that the Angel of Death would spare their first born child and pass over their homes. After this, Pharaoh relented and said that the Jewish people could leave.

Passover is celebrated today in homes by having a seder, in which the Passover story is read in a special order from the book called a haggadah. The celebration reminds the people that they are now free. There are different parts of the seder and, during the seder, traditional and symbolic foods are eaten. These delicious brownies are perfect for Passover, since they use no flour.
  • 75g (3oz)softened unsalted butter
  • 75g (3oz) sugar
  • 5 eggs with yolks and whites separated
  • 150g (6oz) dark chocolate
  • 150g (6oz) ground almonds
  • pinch of salt

  • 22cm (9”) Baking Pan
  • Greaseproof Paper
  • Wire Rack

  1. Pre-heat the oven to 180°C/350°f/Gas Mark 4
  2. Cream the butter and sugar together
  3. Mix in the egg yolks then set aside
  4. Melt the chocolate in a dish placed over a pan of hot water, cool for a few minutes, then mix the chocolate into the butter mixture
  5. Mix in the finely ground almonds
  6. Beat the egg whites until they are stiff but not dry (soft peaks), then fold them into the chocolate batter mix
  7. Pour the mixture into 22cm (9") greased baking pan
  8. Bake for 45 min
  9. Cool in the tin and cut into squares
  10. Remove frm tin and place on wire rack to cool
