Ingredients
- 15ml (1 tablespoon) olive oil
- 1 red onion, peeled and finely chopped
- 1 garlic clove, peeled and crushed
- 650g ( 1lb 10oz) frozen petits pois
- 750ml (1¼ pints) vegetable stock
- 5ml (1 teaspoon) dried mixed herbs
- 6 rashers streaky bacon
- pinch of salt and pepper
- 15ml (1 tablespoon) butter, optional
Healthier version
Leave out the butter.

Making and cooking it

- Heat the oil in a saucepan. Cook the onion over a medium heat for 5-6 minutes until softened
- Add the garlic and cook for a further minute
- Stir in three quarters of the petits pois, then pour in the stock and add the mixed herbs
- Bring to the boil and simmer for 10-12 minutes
- Meanwhile, grill the bacon until crisp
- Allow the soup to cool for a few minutes, then transfer carefully to a food processor and mix until smooth
- Return the soup to the pan and add the remaining petits pois
- Bring to the boil and simmer for 2 minutes or until the petits pois are tender
- Season to taste, and then stir in the butter (if using)
- Break the bacon into pieces and add a quarter of it to the soup
- Pour into bowls and scatter the remaining bacon over the top
