A simple Burns Night recipe. Robert Burns was a famous 18th century Scottish poet. Each year, on 25th January, Scots all over the world celebrate his birthday.

The celebrations can vary from a huge dinner with music, speeches and lots of food to a quiet night of poetry reading.

Ingredients
  • 25g (1oz) of pinhead or coarse oatmeal
  • 250g (10oz) of fresh raspberries
  • 300ml (½ pint) double cream
  • 1x 15ml spoon (tablespoon) honey
  • extra raspberries and honey for garnishing

  1. Toast the oatmeal in a frying pan on a high heat until lightly brown
  2. Blend the raspberries in a liquidiser until smooth
  3. Whisk the cream to a soft consistency 
  4. Mix in the oatmeal and honey
  5. Fold in the raspberries
  6. Serve in glass bowls and decorate with honey and fresh raspberries
