This is a vegetarian recipe

This is Thomas and Harry's soup, one of the soups made by pupils for the Spaldwick Community Primary School Soup Competition.

This recipe uses seasonal ingredients, some are optional

  • 1 pack of bacon (lean off cuts)
  • onion
  • garlic (fresh, dried or paste optional)
  • carrots, diced
  • 1 stock cube
  • tinned chopped or fresh tomatoes
  • tomato paste (optional)
  • pasta, broken into small pieces
  • dried or fresh herbs (basil, chives)
  • black pepper
  • vegetables, either peas, runner beans, small pieces of cabbage leaf, sweetcorn, or a combination of these
  • pearl barley (optional)
  • Red Leicester cheese (optional), This is more stretchy and fun than parmesan
  • olive oil
  • Knife
  • Wooden Spoon
  • Saucepan
  • Grater
  • Blender
Making and cooking it

This needs to be a hearty soup but not a stew, so you need to adjust the amount of ingredients and the amount of stock

  1. Take a large saucepan and add some olive oil and put on a low heat
  2. Add the chopped onion and the garlic and soften in the oil
  3. Add the bacon and black pepper and cook for a few minutes, then add the carrot and tomato paste (if using)
  4. Once stir fried for a few minutes, add  the fresh or tinned tomatoes
  5. Leave to heat while you add some hot water to the stock cube in a bowl
  6. Add the stock to the saucepan, once simmering add your choice of vegetables
  7. Allow to simmer until the carrot has softened
  8. Add pasta and fresh herbs (dried herbs would need to be added earlier)
  9. Add more stock, if required
  10. Simmer for a few minutes and then serve with a garnish of grated Red Leicester cheese
