This is Edmund's soup, one of the soups made by pupils for the Spaldwick Community Primary School Soup Competition.

  • 500g (1lb 2oz)sweet potatoes (peeled and chopped)
  • 500g (1lb 2oz) carrots (peeled and chopped)
  • 2 cloves of garlic (crushed)
  • 2 chillies
  • 50g (2oz) of creamed coconut
  • juice of one lime
  • 1 litre (1¾ pints) of vegetable stock
  • 1 x 15ml spoon (tablespoon) of olive oil
  • Knife
  • Wooden Spoon
  • Saucepan
  • Blender
Making and cooking it
Always wash your hands before preparing food Always wash your hands before preparing food.

  1. Fry the onion and garlic in the oil until soft
  2. Add the chillie, then sweet potatoes and carrots
  3. Cover with stock, bring to the boil and simmer for 20 minutes (until tender)
  4. Liquidise soup then return to the pan
  5. Season and add coconut and lime
