This is Edmund's soup, one of the soups made by pupils for the Spaldwick Community Primary School Soup Competition.
Ingredients
- 500g (1lb 2oz)sweet potatoes (peeled and chopped)
- 500g (1lb 2oz) carrots (peeled and chopped)
- 2 cloves of garlic (crushed)
- 2 chillies
- 50g (2oz) of creamed coconut
- juice of one lime
- 1 litre (1¾ pints) of vegetable stock
- 1 x 15ml spoon (tablespoon) of olive oil
Equipment
- Knife
- Wooden Spoon
- Saucepan
- Blender
Making and cooking it

- Fry the onion and garlic in the oil until soft
- Add the chillie, then sweet potatoes and carrots
- Cover with stock, bring to the boil and simmer for 20 minutes (until tender)
- Liquidise soup then return to the pan
- Season and add coconut and lime
